Portobello mushrooms filled with a tomato and courgette stuffing.

So far this season the local mushrooms have not been available as usual due to lack of rain how ever I found theses nice portobello the other day !

Prept and marinaded in tamari you need to brush this on then leave to rest for a couple of hours, then filled with a tomato and courgette dice dressed with a sun dried tomato herbs sauce return to the dehydrater for an hour to warm to through I topped mine with buck wheat crumble.

Portobello mushrooms are ideal to stuff with any sort of pesto ie spinach, broccoli,

rocket, watercress etc etc.
